Dot's Coconut Pie
Dot’s Coconut Pie
This makes 2 small pies or 1 deep dish pie
Bake pie shells at 400 degrees until very lightly browned.
Set oven temp. to 350 degrees
4 eggs
1 stick butter melted
1 cup sugar
½ cup buttermilk
½ cup coconut (you may use more if you love coconut like we do)
1 tsp. vanilla
Mix all together
stir in coconut
pour into pie shell or shells
I have a teensy bit of buttermilk left. Thanks for sharing this. I may ask the girls to bake this today. I'm still under the weather.

DeleteHI Michelle! Oh, I'm sure I would love this pie! I love coconut so I'll have to try it. Good luck with your crocheting. I crochet too and have made a few doilies in my past. This one of my grandmothers has the finest thread. I've never seen any thread this dainty. Sure made a pretty little doily though.

Mmmm, great looking pie. I haven't thought about our dessert for Super Bowl yet. I wish I had stopped by sooner. I'd be making this one tonight.
